We eat lots of good cheese. We thought it was time to keep track of it all, so xhollydayx pulled out a notebook and started writing it down. Here's the list so far this year

It's called "Ubriaco." It's not a cheddar, as "cheddaring" refers to a very specific process by which the curds are broken up during the cheesemaking process.

It's a washed-rind, hard, raw cow's milk cheese.
