Sweet potato black bean enchiladas recipe

Sweet potato enchiladas 14 points for 2 (recipe courtesy of fyfer)

This makes 1.5 lasagna-size pans full.

4-5 sweet potatoes
1 onion
2 red bell peppers* ( I used 1 yellow and 1 red half peppers, as the reds were dreadful at the store)
garlic (at least 5 cloves)
paprika about 2 tsp?
cumin* at least 2 tsp
chipotle peppers, ground* 1/2 tsp
coriander* 1/2 tsp
cayenne pepper 1/4 tsp
1 can black beans, rinsed
12 large flour tortillas
1 large can enchilada sauce (I used red, 20 oz)
cheddar or jack cheese (half a block)

Poke a few holes in the yams and bake them at 400 degrees for 1 hour.

Saute the onion, peppers, and garlic. Add the paprika and cayenne, and salt if you want. When the yams are soft, peel them. Put them and the onions & peppers in a large bowl and mash them up. Drain the beans and add them.

Put a few large spoonfuls on a tortilla, roll it up, and put it in a lasagna pan. Repeat - you should be able to fit about 8 in the pan. It makes 11-12, so I use a small square pan also, but another intelligent solution would be to cut the recipe down (just varying the number of yams should do it - the other stuff could be more concentrated and it would still taste great).

Pour the enchilada sauce all over them so they're swimming in it. I used a large can of red on the large pan and a small can of green on the small pan. Shred the cheese and sprinkle it on top.

Bake at 350 for 20-30 minutes (20 min if the contents are still warm from before).

*= my modifications. Spices are approximate because I just eyeball and season to taste.

THIS WAS FREAKING FANTASTIC!!! And 2 enchiladas were extremely filling for 14 points!

I even went to the gym to earn 5 APs

Total 26, with credit of 5 APs net 21. YAY No flex used.
