Turkey Stock Application No. 1: Turkey Barley Soup

Turkey Barley soup

All approximate
1.5 cups of chopped carrots (or so)
1.5 cups chopped celery
1.5 cups or so chopped mushrooms (because mushrooms+barley=greatness)
1 large chopped yellow onion
2-3 tbsp olive oil
1.5 cups pearled medium barley, rinsed well
2 tsp+ thyme (I used French ooh la la)
1/2-1 tsp oregano
8 cups turkey stock
1.5-2 cups or so cooked turkey meat chopped in bite size pieces
Salt to taste

Sauté onions til softened. Add mushrooms and sauté til softened and cooked about 5 minutes. Add carrots and celery and sauté til husband complains. So 5-7 minutes. Add herbs, sauté 2-3 min. Add stock,, rinsed barley, bring to a boil and cover and simmer stirring occasionally for about 40-45 min til barley is cooked. Add turkey and heat through then salt to taste. Enjoy-will be better next day. If gets thick, thin with stock or water to reheat. Finish with fresh squeezed lemon juice before serving and some fresh ground black pepper if desired.
