Not a new one, but a goodie

E's Cheater Jambalaya

4 tsp olive oil
1/2 pound (8 oz) peeled deveined shrimp, thawed
4 oz of skinless turkey sausage (or feel free to use chicken sausage, polish sausage, or andouille but the last 2 are higher points)
1 medium onion diced
1 large or 2 small bell peppers diced (green or yellow or whatever you like)
1 can diced tomatoes
Cajun seasoning (or whatever seasoning mix you enjoy) I probably use 2-3 tsp total but add bit by bit to build the flavor as much as you like it.

Put 2 tsp olive oil in a nonstick skillet (preferable one with some depth to it). Add the sausage and let them get a little color to them which takes a few minutes. Add some cajun seasoning. Add the shrimp and cook on one side (season them liberally with the cajun seasoning) for about 90 sec to 2 min, then flip and cook another 1-2 minutes---careful not to overcook; err on the under cooked side because they will cook in the mix as well at the end for a bit. Remove all meat to a plate and keep warm.

Add remaining olive oil and sauté onion until softened. Add some seasoning mix to this (FYI oil really helps bloom the flavors of ground spices). Add the peppers and sauté for about 2-3 minutes. Then add the diced tomatoes (no need to drain), spice it up a bit more and allow to simmer with the lid on for about 7-8 minutes (or longer if you have time or something else to do). Uncover and add the meat back and stir well. Let it heat through and adjust final seasoning (about 2-3 minutes at most). Enjoy Dinner in under 30 minutes.

Makes 2 generous servings, 6 points each. You can serve with rice, just count the points.
