A few weeks ago, I decided to get some fusilli, not with any recipe in mind, but rather, to keep around the apartment just in case I felt like cooking with it. I also grabbed a bunch of tomato paste, because I was too lazy to make my own tomato sauce.... so about two weeks ago, I decided to cook again, and I ended up making a bolognese sauce!
So after a few attempts at it, I finally perfected the sauce to my tastes. Though admittedly, it would be nice to add some cream and maybe some other spices, the sauce tastes great, and it's a nice light dish for a meal in at home.
Pasta Bolognese
1 tomato, diced
1/2 onion, diced
mushrooms, sliced
1/3 carrot, diced (optional)
olive oil
beef, diced into really small cubes (i don't really use a lot of meat, but some is good)
1 clove of garlic, minced
2 Tbspoon tomato sauce
chicken broth
oregano
salt and pepper to taste
1 cup fusilli
Fry olives in olive oil in a flat skillet until slightly soft. If you decide to cook with carrots, cook them with the carrots and let them cook a little bit longer. Then add mushrooms and tomatoes. Let fry a 2-3 minutes then add the beef. Add salt and pepper to taste. I usually like to add a lot of pepper and some red chili pepper flakes for a bit of spice. Once the beef is browned, add the tomato paste and the chicken broth. Stir in oregano. When the tomato paste is mixed well, I added a cup of uncooked fusilli. Cover and simmer until the pasta is al dente.
about 2-3 Servings
Top with some grated parmesan :P
