Seeking Advice

How are you guys? I'm interested in making a plush and I was hoping you guys can gimme some tips on choosing the right materials (i.e fabric) and going about creating my pattern (shouldn't be too hard).
I'm a HUGE Dr. Suess fan (lol though I'm 19) and I want to make a Cat in the Hat plush and maybe the Things afterward, but one thing at a time.
I want my Cat in the Hat to be cuddly and soft, I was thinking Jersey cloth, but as a beginner stretchy cloths gimme trouble. Any other suggestions? Thanks in advance!
P.S. I've been wondering...Do most of you guys hand-sew your plushies, or machine sew. What's the differences? Pros and Cons of either? Which do you prefer? I'm contemplating buying a sewing machine soon, but if hand-sewing is more convenient when making plushies, maybe I won't shell out cash for insanely pricey one? Hmm....
