Remind me not to make one of these again... And something that made me smile.

I am making a celebratory cake for my sister and brother in law's 40th wedding anniversary party tomorrow. Their daughters asked if I could do a red velvet cake. It is driving me round the bend!!

I made 2 of the layers yesterday afternoon. They took 4 bowls and 3 food mixers (the big one and the hand-held one), and then took longer to bake than the recipe said. Each one rose nicely in the oven - then collapsed down once out even though the cocktail stick to test them came out totally clean and they had pulled away from the sides of the tins. Then I went to take them out of the tins and onto cooling racks - the sort of thing I do over and over... and this happened;



I was out with 'the girls' last night and had, originally, left the last layer to do this morning - so first thing this morning I had 2 more to do. I now have 3 layers - and each one sank after it came out of the oven, even though they were cooked through - I am assuming they are meant to. At least the one that came apart allows me to see the middle, and it is, as Nadiya described hers, 'fudgy' and not in any way uncooked. But even so they are denser than I would have liked. Decorating is going to be the easy bit!

But, on a lighter note, you know how you will get the first line of a WhatsApp post on the home screen of the phone? Well as I got out of the car on Wednesday the phone pinged and, on the phone, was; 'It's the National Sports Centre, not a cult!!'

I think that is probably my headline of the week.
