Ok, to be clear, I meant LJ cuts when I said cuts.  I'm sorry I didn't think of how that could be taken.  I'll admit, I get down sometimes.  But, I could never do that to myself.  I also know that my family and close friends care about me very much and would be extremely worried if I ever did that kind of crap.

Ok, now that that's hopefully clear, I'll talk about cheese.  I don't know how many people are aware, but I was raised on a cattle ranch.  So, I have a certain love of meat that is perhaps more than some people.  That said, I love cheese so much more.

How do I like my cheese?  I enjoy much the same way I enjoy fish.  When it's the right kind, I like eating it raw.  However, I love it much much more cooked and melted.  In my opinion, cheese can make almost any dish even better.  I put it in soups, chilis, hot dishes, pasta dishes, ramen, toasted on bread, on eggs, on potatoes, etc.  It's weird to eat a burger without cheese for me.

It seems to me that cooking cheese unlocks it magical taste.  One of my favorites is a good sharp cheddar flavor-wise, although I really enjoy mozzarella for its low melting point.  I haven't tried many kinds of cheese as they can be a bit expensive and I'm cheap.  American's pretty good for raisin bread and burgers and such and can be helpful for casseroles.  I also enjoy swiss, especially on mushroom and swiss burgers.  Oh, and pepper jack is awesome on sandwiches.  Now, when I say cheese, this isn't just the typical stuff.  I also love cottage cheese and cream cheese.

Why in the world did I pick cheese as a topic?  Someone I know once told me, "Don't be sad.  There are plenty of things to be happy about, like cheese."  Cheese does indeed make me happy.  I actually think a good cheesy meal would make me happier than coffee.
