Box mix (*gasp*!) Chocolate fudge cupcakes with a rum kicker

(disclaimer: I'm not v. good with cuts so if this doesn't work please bear with me til I fix it :))



It's my dad's birthday today so I thought I would bake some cupcakes.  It's not something I usually do but I was so set on them being perfect, imagine my horror when the cupcake tin ended up being too big for the baking tray so it went lopsided and the cupcakes overspilled!  Fail.

Still, the VERY generous addition of Bacardi rum was most appreciated by all, although the Glace cherries steeped in rum were probably overkill cos I can still taste it now, but all in all not bad for a first attempt.

While in the oven, things seemed to be going well...



However, on inspection... left a lot to be desired.  Betty Crocker either never heard of self-raising flour, or I added too much Rum.  Or it could have been the milk I added accidentally because I didn't read the box properly to see the milk was meant for the icing.  D'oh indeed.



The finished product, with the added 100% proof cherries *lol*



NOMS.  I recently went to the US on holiday and went to the Harry Potter park, you can see my Butterbeer tankard in the background. :)
The end result was a REALLY soft cake, it almost melted in your mouth - gorgeous.
