Thanksgiving cupcakes!
Chocolate cupcakes from VCTOTW, de-veganized by cranberry cream cheese icing & garnished with chocolate chips and craisins. Same chocolate cakes with chocolate cream cheese icing and turkey garnish (idea snagged from a CC user!) Apple cider cupcakes with cider cream cheese icing and toasted pecans. I ended up using this recipe: http://coconutlime.blogspot.com/2006/10/apple-cider-cupcakes.html. The cake is excellent, but if I make them again I will reduce the cider first for a more intense flavor. I used reduced cider, butter, neufchatel, and confectioner sugar for the icing.
