Cupcakes!

I finally managed to make a batch of cupcakes and photograph them before they were eaten. Go me!

After Dinner Mint cupcakes, aka chocolate chip cupcakes with mint buttercream frosting. Yum!





Cupcakes:

- Sieve together 200g plain flour, 50g cocoa powder, 2 teaspoons baking powder and a pinch of salt.

- Cream together 90g soft, unsalted butter and 100g caster sugar

- Whisk in two eggs

- Alternatley, beat in the dry ingredients and 160ml single cream

- Add a few drops of mint extract and some chocolate chips

- Spoon into cupcake papers (makes about 12) and bake at 180deg for 20 minutes or so

Frosting:

- Cream together 185g soft unsalted butter and 300g icing sugar until light and fluffy

- Carefully add 2 tablespoons milk and mint extract to taste, food colouring if you want.

I've made these before and just popped some halved After Eights on top...gives you a more sophisticated effect than the green/pink polka dot affair! ;)
