Ok, I tried making these tonight and they kind of....collapsed in the center. When you made your caramel, was it really watery? I'm guessing that might have been my problem.
I boiled the water first and by the time the sugar melted, all but maybe a little less than 1/4 cup if it had evaporated so I boiled another 1/3 cup and then followed the directions from there. It said when you pour the rest of the water in, it should be up to 1/2 cup. Mine only went to 1/3 so I added more (sorry if this is confusing!).
No, I followed. My caramel was watery, so I don't think that's the problem.
This has happened to me with other cupcakes before--I don't know what the problem is, but part of me is suspecting that overfilling the cupcake might be the problem. My guess is that when there's too much batter, the cupcake rises right out and over the sides, so when it finishes cooking, it collapses on itself. If I only fill my cupcakes 1/2- 2/3, then when they rise, if they collapse, they fall back in on themselves. BUt I'm a total novice, so I have no idea if I'm just making that up. :)
No, no. Thanks for your input! I'll try them again when I get more ingredients and try putting a little less batter in this time. They still tasted great, they were just a little flat, haha!
