Ice Cream Cone Cupcakes, and Cherry Cheesecake cupcakes

I was on a cupcake roll this weekend, so I made two batches of cupcakes to try out some recipes from my new cupcake book, Cupcakes: From the Cake Mix Doctor.

Edited to add a bit of info about the recipes. I'm not going to take it directly from the book, but I can give you the gist of it, and you can see if you want to go out and get it! Or even try it on your own (seriously though, the book rocks).


I started with chocolate ice cream cone cupcakes with a chocolate buttercream frosting. The frosting was fantastic, and the cupcake itself was good, but the cone part was pretty gross. It got very stale and chewy after baking. This was my first attempt at piping frosting, so it took some trial and error to get it going.

Basics:
You make a cake mix (I used a butter recipe chocolate cake), and drop about 1/4 of a cup of batter into the cones. The book says make sure to not fill them more that halfway, but I filled mine about 3/4 of the way, and they turned out perfect. Then you just make a generic chocolate buttercream frosting; I used the one from the book, but there are tons of recipes online.

And then I made cherry cheesecake cupcakes, which got a big fat thumbs up from the family. They were very tasty!

Basics:
Mix up a yellow cake mix according to the box directions, adding a packet of instant vanilla pudding mix and a cup of milk. Make the cheesecake filling with cream cheese, sugar, and an egg (again, recipe in the book, but I'm sure you could find one online). Place a Nilla Wafer cookie at the bottom of each cupcake wrapper, and drop a big tablespoon of batter over that. Then, drop a teaspoon of the filling over that, and bake. Let the cupcakes cool, then drop some cherry pie filling on top, and sprinkle with powdered sugar. SO GOOD!
