In an attempt to use the rest of my cream cheese frosting (which is AMAZING btw!!!) I tried another cupcake recipe...this time I made CHOCOLATE :D I actually found the recipe on LJ from a user who has linked to it a few times (I can't remember who, but THANK YOU!!!)
Last weekend I made a Martha Stewart recipe and they were SO dense it was borderline gross D:
These cupcakes, however, are a HUGE success and I can't wait to make them again!
This is only my 4 or 5 attempt baking from scratch (only 2nd for cupcakes) so i'm really proud of these!
I already ate a few :X The frosting doesn't look too pretty because it went on kind of sloppy last night, but it set perfectly and taste is more important than presentation, right? :)
We were also trying to pile quite a bit on since I had quite a bit left and wanted to use it all.

Sprinkles Cream Cheese Icing
8 oz of cream cheese, very soft
4 oz of butter, very soft
1/8 tsp salt
4 cups of powdered sugar, sifted
1 tsp of vanilla extract
Beat the cream cheese and butter with the salt until light and fluffy. Gradually add the powdered sugar, and the vanilla - beat until smooth and creamy.
I frosted 24 "normal" sized cupcakes with that batch of icing, it makes quite a bit :)
