Easter Chocolate Cupcakes
Like so many of you here, I made some cupcakes for Easter. As you can see in the pic, I also made Cherry Lemon Tarts (not cupcakes, but extremely delicious), but the focus of my cupcake-tart centrepiece was the Easter nest chocolate cupcakes. Went with my favourite standby chocolate cupcake recipe, called Mom's Chocolate Cupcakes, and topped it with Low Fat Chocolate Buttercream. Holy moley, this is possibly the greatest icing I've ever eaten. It tastes almost like a mousse, and isn't as sweet as a conventional buttercream (which this most definitely is not - in my experience, I have never seen a buttercream look like this). Simple, pretty, tasty. Just thought I'd share!
