Zesty Cupcakes

Orange cupcakes with lemon and lime buttercream. Some were topped with whole cherries and others decorated with rolled grenadine buttercream. Mmm mmm good! :D A lot of flavor!









Recipe

Orange Cupcake
2 1/2 cups flour
1 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, slightly softened
1 1/2 cups sugar
2 eggs, room temp
2 egg yolks, room temp
1 tsp vanilla
2 tsp orange zest
1/4 cup fresh orange juice
1/2 cup milk

Preheat oven to 350 degrees F.

Sift together flour, baking powder, baking soda and salt.

Beat butter at medium speed until creamy. Gradually add sugar, increasing speed until light and fluffy. Add eggs and yolks one at a time, beating until incorporated after each addition. Beat in vanilla and orange zest on low speed. Beat in orange juice. The batter will appear somewhat curdled until the addition of flour. Beat in dry ingredients, alternating with the milk, mix well.

Pour batter into cupcake liners 2/3 full. Bake for 19-23 minutes.

Lemon and Lime Buttercream
1 cup butter, softened
5-7 cups icing sugar
1/2 cup milk
2 tsp vanilla
2 tsp fresh lemon juice
2 tsp fresh lime juice
yellow food coloring
green food coloring

Place butter in mixing bowl. Add 4 cups icing sugar and then the milk and vanilla. On medium speed, beat until smooth and creamy. Gradually add the remaining sugar 1 cup at a time, beating well after each addition, until icing is of piping consistency.

Seperate the buttercream into two bowls. Add lime juice and green & yellow food coloring to one bowl. Mix well. Add lemon juice and yellow food coloring to the other bowl. Place in piping bag. Decorate as desired.
