I'm already to make some new and yummy gourmet cupcakes, and figured I'd share the recip I'm about to try...
Cappuccino Cupcakes
[makes 12 cupcakes]
For cupcakes you need:
[001] 1-cup all purpose flour
[002] 2 teaspoons baking powder
[003] 1 teaspoon saly
[004] 3/4 cup (1.5 sticks) unsalted butter, room temp.
[005] 3/4 cup brown sugar
[006] 2 eggs
[007] 1 table spoon coffee extract
[008] 1/2 cup half-and-half or light cream
For the steamed coffee frosting you need:
[001] 1 1/4 cups brown sugar
[002] 3 table spoon extra strong coffee
[003] 2 egg whites
[004] 1/4 teaspoon baking powder
[005] coffee beans for decoration (optional)
Let's make them!
[001] Preheat oven to 350 degrees F
[002] Sift flour,baking powder, and salt together [set aside]
[003] cream butter and sugar until light and fluffy. add eggs, one at a time blending well after each addition. add coffee extract. alternately add dry ingredients and half.and.half, beating until smooth.
[004] divide batter between 12 cupcake papers. Cook for 25 minutes or until tester comes out clean.
for the frosting:
[005] mix all ingredients in top of a double boiler. place over repidly boiling wate and beat for 7 minutes with electric mixer until frosting stands in peaks.
[006] remove from heat and spread on cupcakes. Sprinkle with cocoa powder and garnish with coffee bean.
