Freezing Cupcakes?

I'm no caterer, but I would imagine that if it's the only dessert, you'll need more than 100 of them. Most people will want one, some want two, and that's with only one flavor. I'd probably do in the 125 - 150 range if they're all the same. If you're doing two flavors, I'd say one per person per flavor, for an estimate.

i'd be planning on making about 200 cupcakes--- 2 per person is a good number to be counting on, when my partner and i did cupcakes for our commitment ceremony we did two per person plus a couple of extras and they were all gone by the end of the day and this included loads of other food...

use real freezer bags, doubled up. I know I make little(about the size of a large muffin) pumpkin loaves and apple loaves and cranberry loaves and they always freeze well. They are actually more moist after being frozen. Freeze on cookie sheets if possible, till frozen hard, so they dont get warped. If you have a vacuum sealer that would be better. Ask your friends, you would be surprised who has one.

My guess is that anything with fruit will stay moist. apple, pineapple, pumpkin, cranberry, carrot etc.
