Strawberry Blossom Cupcakes~

Yesturday,to celebrate the return of new episodes of Desperate Housewives,and Brothers & Sisters,I decided to do a little baking.

Now,since the baked goods were amazingly good,and haven't killed anyone thus far,I thought I'd share the recipe ;D





Recipe snagged from CupCake Project @ Blogspot,however I left out the jam filling,and used an icing recipe of my own ;)

Strawberry Blossom Cupcakes~

Makes : 24 Cupcakes
Cook Time : 18 - 20 mins.
Oven Temp : 350 F

Ingredients :

♥ 2 & 1/2 Cups Cake Flour
♥ 1 Teaspoon Baking Soda
♥ 1/4 Teaspoon Salt
♥ 1/2 Cup Unsalted Butter (I just substituted w/ margerine xD)
♥ 1 & 1/2 Cups Sugar
♥ 2 Large Eggs
♥ 1/3 Cup Buttermilk
♥ 1/4 Cup Canola Oil (Sunflower oil worked fine for me)
♥ 1 Teaspoon Vanilla Extract
♥ 1 Cup Finely Chopped Strawberries

Directions :

{1} Preheat oven to 350 F & line 2 cupcake pans w/ liners.Set aside.

{2} In a medium bowl sift together flour,baking soda,& salt.Set aside.

{3} In a large bowl cream butter & sugar w/ electric mixer.Add eggs.Mix until smooth & creamy.Add buttermilk,oil,& vanilla.Mix until combined.

{4} Add flour mixture to butter mixture.Mix until just combined.Stir in strawberries.

{5} Place batter in each cupcake cup,filling each 1/2 full.Bake approx. 18 - 20 minutes.Let cool.

For Frosting:

♥ 1/2 Cup Butter,softened
♥ One 8 ounce package Cream Cheese,softened
♥ 3 - 3 & 1/2 Cups Icing Sugar
♥ 1 Teaspoon Vanilla Extract
♥ Several (I used 4-5) large strawberries,chopped & pureed

{1} In a large bowl cream butter & cream cheese until smooth.Beat in vanilla.

{2} Add icing sugar & beat on low speed until combined,then on high until icing is smooth.Stir in pureed strawberries.

{3} Frost -cooled- cupcakes & serve.Keep cupcakes & any leftover icing in the fridge ;)

These cupcakes are so yummy,it was worth having to do the dishes after baking xD
