A question for people who have used Cool Whip instead of frosting:
How did it work out for you? I'm thinking of using it, but I'm afraid it won't hold up. The cupcakes will be on an hour-long car ride before they get to be enjoyed. My instinct says that Cool Whip needs to be refrigerated until right before it's served, but even if I weren't traveling, I don't want to serve cold cupcakes.
Any thoughts?
