Cupcake Saturday..
Hi everyone! I made some cupcakes today :) My husband's favorite cake is Pineapple Upside Down Cake, and since our 1 yr anniversary is in 1 week i thought i would make him something special. I made my own version of the cake into cupcakes. and believe me the pictures do not do justice to the way these things taste.
I used a box mix to save time. Pineapple Supreme. I put brown sugar in the bottom of the cups, then added the batter. Once they cooled i used the end of a fork to dig out a hole in the middle, i added some crushed pineapple inside. I mixed up a tub of whip cream with 2 table spoons of sugar and some cherry juice, put it into a frosting bag and piped it on then added the cherry. :) Hope you enjoy the pictures, i know we are enjoying eating them.
