Screwdriver Cupcakes

sugar_rush_cake requested the recipe for my screwdriver cupcakes, so here it is!

Screwdriver (Orange) cupcakes:

1/4 lb. (1 stick) unsalted butter at room temp.
3/4 c. granulated sugar
2 large eggs, separated at room temp.
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c. orange juice (I used a low-acid, pulp free kind)
Zest of 2 oranges

1. Preheat oven to 350 degrees. Insert liners into medium cupcakes pan.
2. In large bowl cream together the butter and sugar with an electric mixer on medium speed until fluffy, 3-5 minutes. Add the egg yolks. Beat well.
3. In a separate bowl combine the flour, baking powder, baking soda, and salt.
4. Add the dry ingredients to the creamed mixture, alternating with orange juice. Fold in orange zest.
5. With clean beaters, whip the egg whites until stiff peaks form. Gently fold the whites with a rubber spatula into the batter.
6. Fill the cupcake liners one-half to two-thirds full. Bake for 20-25 minutes or until a toothpick inserted in the center of cupcakes comes out clean. Cool cupcakes in the pan.
7. Prick holes in tops of cupcakes with a fork. Brush on orange liqueur.
8. Frost the cupcakes with spiked orange frosting.

Spiked Orange Frosting:

3 tbs. orange juice (I used a low-acid, pulp free kind again)
3 tbs. orange liqueur (Grand Marnier, curacao, or Triple Sec)
3 tbs. unsalted butter at room temp.
3 3/4 c. confectioners' sugar
1 1/2 tsp. orange zest
Few grains salt

1. In a small bowl mix the orange juice and orange liqueur.
2. I a medium bowl cream the butter. Add the sugar to the butter, alternating with orange juice mixture until desired consistency is reached.
3. Stir in zest and salt. Beat with an electric mixer on high speed for 1 minute until creamy.
