Your cupcake history: I love cupcakes and baking/cooking in general. My whole family is really into food and entertaining. My Mom used to decorate wedding/birthday cakes so that's how I learned most of the decorating tricks I use. Hopefully I'll be able to share some of them with you all soon!
Why you like cupcakes: They aren't as intimidating as a huge cake. If you mess one up when decorating.. it's not a big deal.. you get to eat it!
Favorite cupcake: It would have to be the last ones I made. My boyfriends favorite cake is Red Velvet. He's really particular about it because he's had some horrible Red Velvet cake. So, I made sure I found a recipe with a ton of red food coloring and a decent amount of vinegar for that little zing. I used

Cake:
2 cups sugar
1/2 pound (2 sticks) butter, at room temperature
2 eggs
2 tablespoons cocoa powder
2 ounces red food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 tablespoon vinegar

Preheat oven to 350 degrees F.
In a mixing bowl, cream the sugar and butter, beat until light and fluffy. Add the eggs one at a time and mix well after each addition. Mix cocoa and food coloring together and then add to sugar mixture; mix well. Sift together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk. Blend in vanilla. In a small bowl, combine baking soda and vinegar and add to mixture. Pour batter into 3 (8-inch) round greased and floured pans. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Remove from heat and cool completely before frosting. and just put it in cup cake liners. For the frosting I used

Frosting:
8 oz. cream cheese, softened
1/4 cup (1/2 stick) butter or margarine, softened
1 pkg. (6 squares) white baking chocolate, melted, cooled slightly
1 tsp. vanilla
2 cups powdered sugar

Beat cream cheese and butter in large bowl with electric mixer on medium speed until well blended. Add melted chocolate and vanilla; mix well. Add sugar gradually, beating until light and fluffy after each addition. I don't have any pictures.. I've only taken pictures of cakes I've made. But, since I now know about the community I will definitely be taking pictures of my cupcakes from now on!

But! I need to ask a question.. one of my best friend's getting ready to turn 19. I know it's not a huge birthday like 18 or 21. But, I want to do something really special for her. So, I thought about baking some cupcakes. If any of you have any recipe suggestions/decoration suggestions, etc. Please let me know. Also, we all call her Bug so I thought I could play around with that a little. Thanks so much guys!
