So on the weekend I went searching for the Crapapple Bakery Cupcake Book. I've been wanting to buy it for ages. Infact, I almost bought it last weekend, and then put it down and said 'no, I'll wait until next weekend'.....went back to the bookstore.....no cupcake books left :( ANYWAY I finally hunted it down, so here's some pics of plain old vanilla cupcakes with buttercream icing.
Also , under the cut (providing it worked......I hope it did, there's lots of pics.......!), there are some pics of Passionfruit Yoghurt Cupcakes that I baked tonight.

Here's the recipe for the passionfruit yoghurt cakes:
1 cup (240ml) canola oil
1 ½ cups sugar
2 eggs - large
1 cup passion fruit yoghurt
Juice and rind of 2 lemons
2 cups self-raising flour or 2 cups plain flour plus 2 teaspoons baking powder
Heat the oven to 160oC - 140oC if fan assisted. Line muffin tin with cupcake papers.
Beat the sugar and oil until well mixed.
Low the speed and add the eggs, one at a time, then beat until creamy.
Add the yoghurt, lemon juice and rind and mix it all with a wooden spoon.
Incorporate the sieved flour taking care not to over mix it .
Divide the mixture between the cases and bake for approximately 20 min.
When ready let it cool in the tin for approximately 5 minutes before transferring it to a rack.
