I just entered a recipe into a DiFo Healthy Dessert cookoff, and thought I'd share it here too.
Dark Chocolate Key Lime mini Cheesecake - sugar free, low fat.
My batch made 6 mini cheesecakes
Ingredients and calories:
8 oz fat free Philadelphia cream cheese
1 egg
4 packets Splenda or 1 Tbsp stevia - more or less to taste
1 tsp pure vanilla extract
Juice of 2 small key limes
2 Tbsp unsweetened cocoa
2 small pieces extra dark chocolate, melted (I used Trader Joe's 70% cacao)
1 scoop vanilla protein powder or 3 Tbsp flour (I used the protein powder)
6 Tbsp Lite Cool Whip
1/2 cup crushed Murray's sugarfree chocolate cookies
Cocoa and lime wedge to garnish
Per mini cheesecake: (rounded up) 90 calories, 4.25g fat
Preheat oven to 350 degrees. Line muffin pan with 6 liners, then spray liners with Pam. Add a Tbsp of crushed cookies to bottom of each cup, enough to cover bottom.
Beat together the cream cheese, egg, sweetener, and vanilla until creamy.
Separate mixture into two bowls.
Into one bowl, add the protein powder (or flour) and the lime juice. Stir until smooth.
Into the other bowl, add cocoa and melted chocolate. You may want to taste and sweeten as needed.
Evenly distribute the chocolate batter into the bottoms of each cup.
Follow with lime batter.
Bake at 350 degrees until the cheesecakes are firm to the touch and have begun to crack. Remove immediately and keep the cups in the pan until cool.
When cooled, remove cups from pan. Run a knife between the cheesecake the the paper cup to loosen and gently remove.
Top with a Tbsp Light whipped cream and garnish with a key lime wedge and a sprinkle of cocoa.
90 calories and 4.25g fat per cheesecake.
