Two easy cupboard stock recipes

Most of the ingredients for these you can easily keep on hand in the cupboard/pantry, for when you need something to toss together in a hurry!

Nacho Potato Soup
1 box au gratin potatoes
1 10oz can diced tomatoes with green chilies undrained
2 c milk
1 11 oz can whole kernel corn, drained
2 c water
2 c cubed American processed cheese (ie, a brick of velveta)

Combine au gratic potatoes (everything in the box), corn, tomatoes and water. Bring to a boil and simmer until potatoes are tender (15 mins). Add milk and cheese and cook until cheese is melted.

Got leftover taco meat, or cooked chicken? Go ahead and dump it in.

Carnival Beans
1 15 oz can black beans (drained)
1 15 oz can white beans (drained)
1 4 oz can diced chilies (drained)
1 14 oz can diced tomatoes (undrained)
1 15 oz can kernel corn (drained)
1/3 c bbq sause
1/4 t garlic powder
1/4 t cumin powder

Combine and heat through. Can sizes are aproximate- and you can substitute the beans if you can't find one or the other. Wonderful served over rice or cornbread, with a garnish of sourcream.
