1lb pork tenderloin (I just did 4 pork chops)
3 Tbsp bread crumbs (I used panko)
1 Tbsp grated Parmesan (shake cheese)
1 tsp salt
1/8 tsp black pepper
2 Tbsp cooking oil
1 small onion, chopped
1 garlic clove, minced
If you do tenderloins then cut crosswise into 8 pieces, about 1 inch thick. Please each piece on its cut surface and flatten with heel of hand to about 1/2 inch thickness.
I did pork chops because it is easier and I forgot to buy the tenderloin.
Chop onion and garlic and place in pan with oil (I used a cast iron skillet-- you should get one!). Mix Parmesan cheese, bread crumbs, salt, and pepper in a bowl. Heat pan to get onion and garlic to a sizzle. Dredge each piece of pork thru dry mix and place in pan. If the skillet is large then all four will fit. I cooked the pork on top of the onions and garlic to get a good flavor going and then when I flipped each piece I moved the garlic and onions aside so they could fully cooked. I pushed the onions and garlic next to each piece. Just cook until done. I had to cut the pork a bit to check each piece. Cooking time is about 10-15 minutes-ish.
I served with peas, instant mashed potatoes with mushroom gravy, and these Parmesan pepperoni rolls I bought at the Apple Festival.
