ORANGE-INFUSED SIMPLE SYRUP
(I make only as much as I'm expecting to use for the evening. Keeps for a week in the fridge.)
* Granulated white sugar
* Water
* Zest from one orange
Heat equal parts sugar and water in a small sauce pan on a gentle boil until the sugar is dissolved.
Simmer for three more minutes and add the orange zest.
Simmer until you have a very light syrup and you just begin to detect the orange scent.
Let cool/infuse for one hour and strain into a potion bottle.
GIGGLEWATER
Add 1.5 shots gin to cocktail shaker with ice.
Add 1 oz (2 Tbs) of orange-infused simple syrup.
Shake until blended.
Pour into a champagne glass.
Top with champagne or prosecco.
