Ruining my carnivore reputation by posting a vegan recipe, but, I need to have this all on one page. (And, my rep as a designer, since I'm not patient enough to get lj's css for unordered lists to not suck).
Based on:

1 large eggplant, cut into 1-inch pieces (or zucchini)
1 large brown or yellow onion, thinly slices (or, 3 onions)
2 medium carrots cut into 1/2 inch pieces (and parsnips or turnips, I haven't tried sweet potato yet because they seem too soft, but I should, because I have so many)
1 can of whole tomatoes in juices (or, tomato paste & water, & oven-roasted/sundried tomato in olive oil, fresh tomatoes if you've got some)
2 cloves of garlic, minced or finely chopped (or garlic salt, if you don't have whole garlic available)
1 tablespoon ras el hanout (or other Moroccan spice blend), I have neither, ergo:

-- 2 teaspoons ground cardamon ~5 pods, since I oddly have some.

-- 1 teaspoon turmeric
-- 1/2 teaspoon ground black pepper

-- 1/2 teaspoon ground cayenne pepper (franks hot sauce probably covers it, and I don't cook buffalo-style anything nearly enough to use up the sauce quickly enough.)

1 teaspoon cumin
1/4 teaspoon hot chili pepper/cayenne pepper (or Franks red hot sauce, also adds more garlic & some vinegar)
Salt & pepper (whole pepper, because I have it, I assume Franks added enough salt)
cilantro to garnish
paprika, probably because I misread the recipe the first time.
yellow raisins, because, they're there. When I made slow-cooker lamb "tagine", the raisins swelled back into grapes, and I found this very amusing.
