Who even came up with the idea of something else to fuss with when making a bed? Yah, yah…they’re supposed to hide the mattress and make the bed look nice. Yet, I truly believe that they are for people the want to hide the monsters under the bed and pretend they aren’t there.
On with the show. You get recipes since we are waiting on the big storm to roll in.
I know how everyone knows how to make hot chocolate, but I just spent the better part of a year tinkering around to finally arrive at a good homemade version. Not to mention that it still tastes good as chocolate milk when refrigerated.
Hot Chocolate - dairy version
Ingredients
3 tablespoons to ¼ C maple syrup
3 tablespoons cocoa powder
1 C heavy whipping cream
2 C half and half
Directions
Put the maple syrup and cocoa powder in a pan on medium heat. Whisk until no longer lumpy (as the syrup warms the cocoa powder will integrate better). Add in the heavy cream and continue to whisk until thoroughly mixed. Whisk in the half and half and heat until hot. Personal drinking temperatures will vary.
*Honey does work in place of the maple syrup, but the syrup seems to be a more subtle sweetness.
This next one is based off a recipe for Paleo chocolate mousse that was more like chocolate jello. So with a little experimentation I came up with…
Ingredients
1/3 C water
1 packet Knox gelatin (not quite a tablespoon)
¼ C maple syrup
1 teaspoon vanilla
2 egg yolk
2 tablespoons cocoa powder
1 - 13.5 oz can coconut milk
Directions
Put water in a sauce pan and sprinkle the gelatin on top, let sit for a few minutes. After the gelatin has ‘bloomed’ add the other ingredients and turn heat to medium. Whisk until the mixture begins to bubble, remove from heat. Pour into 4 dessert dishes or ramekins. Cool in frig for several hours. Should make 4 - ½ cup servings.
Now I need to remember how I made the same type of thing with pumpkin instead of chocolate. After decorating for Advent is finished.
