Isn't it pretty???
It was a spin on the Ratatouille from the movie Ratatouille. *giggle*
It has the same ingredients as traditional ratatouille, but made PRETTY instead of like a stewed slop.
For my PERSONAL tastes, I left out the eggplant. I had all the other veggies (red pepper, yellow pepper, zucchini, squash, onion, garlic, green beans (not traditional)), and I didn't have the cash to pick up the eggplant - besides, with the way this is made, I'd have needed a long, skinny eggplant, and they're hard to come by around here.
Once it was done, I boiled up some tiny shell pasta with fresh string beans in the water (quite a Rachel Ray move).
The ratatouille itself was WONDERFUL, but I thought adding some kind of grain would be great, and I had no couscous - which likely would've been better in this.
THe setup of the veggies is much like making scalloped potatoes, where you place super-thin slices in a circling-fan pattern.
Due to the lack of MEAT, the boys wouldn't eat it - which is fine with me, since it just means I can eat more for lunch today. One of the boys friends said, "I'm never sure if I'm brave enough to EAT your food, but I can certainly say - your food is ALWAYS so very pretty. Pretty food. It's weird."
But, those boys also require that some portion of their meal at one time had a face. *wink*
And, I asked - but no, the fact that Potatoes have "eyes," and EARS of corn, and a HEAD of lettuce doesn't cut it.
