Fun fact: if you make cornstarch-thickened egg drop soup and put red cabbage in it, it will start out purple and slowly turn blue if you refrigerate the leftovers. Really strikingly disturbingly hydrangea-blue. Or at least, it happened to our soup made with veggie broth; maybe chicken is more acidic.
