Mint Pesto

3 c. Fresh Mint Leaves
⅔ c. Fresh Basil Leaves
⅓ c. Fresh Oregano Leaves
¾ c. Roasted, Unsalted Sunflower Seeds
4 Cloves Garlic
1 tsp Sea Salt
¾ tsp Fresh Ground Pepper
Juice and Zest of 1 Lemon
½ c. Extra Virgin Olive Oil

Begin by placing the herbs, sunflower seeds, garlic, and lemon zest in the bowl of a food processor or blender.
Process until coarsely ground.
Add the lemon juice, salt, and pepper.
Pulse a few times, then slowly stream in the olive oil.
Process for a minute or so, making sure that everything is well incorporated.
