After going apple picking today, I slapped together this recipe, it came out quite tasty :).
Preheat toaster oven to 375°F
Line toaster oven baking pan with foil (keeps cleanup easy), and coat with margarine/butter.
Peel 3 apples and slice thinly (2-3mm slices).
Cover the bottom of the pan with half the apple slices (I did 3 rows of overlapping wedges across the length of the pan).
Drizzle honey/maple syrup (I used honey) over the slices in the pan, and sprinkle lightly with cinnamon.
Make another layer of apples over the previous one, and repeat the honey/maple syrup and cinnamon treatment.
Take a pack or two of a tasty instant oatmeal (I used Quaker Simple Harvest™ vanilla, almond, and honey) and sprinkle it over the top. If the apples aren't juicy (mine were) you may want to sprinkle some water on top.
Put a few lumps of butter/margarine on top (all I had was spray margarine, so I used a few spritzes of that) and stick in toaster oven for 30 mins.
Take the crisp out of the toaster oven and let it cool until you can touch it.
Eat and enjoy :).
Yeah, it's a totally cheap recipe, but quick, simple, and easy is great for when you live in a tiny apartment.
