What to do with all this lemon balm???
Lemon balm is invasive and will tranplant itself anywhere and everywhere but it smells so good so it is forgiven.
Lemon Balm Bread
1/2 c softened butter
1 c sugar
1/2 c chopped lemon balm
2 eggs
1 1/2 c flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 c milk
3 tsp lemon juice
zest of one lemon
poppy seeds
Cream together butter & sugar, add lemon balm and eggs. add dry ingredients. Add milk and lemon juice, zest, and poppy seeds (I used about 1/8 of a cup). Mix well. Bake in greased and floured bread pan at 350 for 50 min.
This bread is fine as is, but if you want to use it for dessert, a lemon glaze drizzled on top is just the ticket.
