It has been a while since we treated ourselves to a decent tuesday dinner. We have so many projects going on right now, it's quite overwhelming. But, we managed to pull it together. No guests, just the three of us which is just fine with me.
Sauteed shitake mushrooms with wilted mixed greens
Grilled/smoked shrimp
Asparagus Parsley soup: Steam asparagus. Meanwhile, sautee garlic and onions. Throw all into a blender with fresh parsley, the juice of a whole lemon, some veggie stock, and salt and pepper to taste. Put back on the stove to heat through. This is a rich, filling soup and so yummy.
The Pie: I use Fannie Farmer's Cookbook for A LOT of my baking recipes. This one is straight from the book and turned out great. The crust was the best one I've ever made, which is pretty exciting.
