Yah, haven't been posting as much since I started playing games on the Evil FB.
Last night I made ham-asparagus rolls for supper. We had a huge spiral cut ham for Christmas, and so these were leftover slices that I'd been trying to figure out how to use. Waste not, want not.
Anyway, you take 8 ham slices that are thin enough to roll around stuff, and 2 cups of grated/shredded swiss cheese.
Steam 24 asparagus spears.
In each slice of ham place three spears of asparagus and 2 Tablespoons of shredded swiss cheese. Roll them, and place in a 13 x 9 inch baking pan with the over-wrap/edges on the bottom.
Take 1/4 cup of butter and melt it in a saute pan, add 2 Tb of flour and stir over low heat until bubbly. Gradually add 1 cup of milk and continue stirring until smooth and thickened. Add 1/4 cup of shredded swiss cheese and 1/2 cup of sour cream (the receipt calls for whipping cream, but I used sour cream and it was great) and continue stirring until the cheese is melted.
Pour the sauce over the rolls in the pan, and then sprinkle the remaining cheese on top. Broil for 4 minutes 4 to 5 inches away from the heating elements.
Really very tasty.
Original recipe was from the Southern Heritage Cookbook.
