I went home yesterday, instead of heading to the gym.
I've decided that I'm not sick, but I'm suffering bad Fall allergies for the first time ever. I've never really had Fall allergies, only bad Spring allergies, but there is something around in the air that I must be allergic to this week.
But I was pretty tired so I just went home to take care of myself. I made an egg bake with kale and cheddar for dinner, and ate some of my green cabbage kimchi. The kimchi is good. The green cabbage is bitter; napa cabbage makes for a sweeter kimchi. But I still like it, maybe because yangbaechu kimchi isn't as heavily seasoned as baechu kimchi. I still want to make a white kimchi out of my red cabbage. Hopefully that will be this weekend.
For the yangbaechu kimchi, I used this recipe but used 3T of the red chili flakes and subbed the scallions with leeks:
