Fatigue and such can occur from the glycemic qualities of the food regardless of gluten content--- the quicker it converts to sugars into your system, your body responds with quick energy, and then it runs out and you grow weary and tired. Refined sugars and starches are worse for this, and intake of starches and sugars without balancing proteins are particularly prone to bad results.
Gluten sensitivities involve the digestive track being unable to process them efficiently, resulting in inflammation of the digestive track that also leads to alternating irregularity, pain, bloating, and vitamin deficiencies as your ability to break down your food is lessened. This leads to more systemic symptoms as it goes on from fatigue to itching.
GLuten and starches are not the same thing, and not all grains contain gluten, yet they can be high on the glycemic index.
Perhaps you can experiment. Go for whole grains and less refined sugars and starches,and don't overload them without proteins and fiber, and just about everyone will have a better time of it.
Ah, good points that I didn't know. I'll experiment with some lesser processed stuff then. TMI, but it's a little hard to tell a difference in what's IBS, and what's something else.
