I'm sorry school's kept you so busy lately :( Just hang in there though, I know you're gonna be ok!
As for your observations, here's my suggestion: Contact the teacher one last time, let her know when your earliest assignment is due, and give her a deadline sometime between now and then to set something up. Let her know that if she isn't able to arrange anything by then, you'll have to ask to be assigned to another teacher. And keep a log of all these dates (when you contacted her, when your observation is due, when you asked her to contact you by) so that, if you do have to ask for another teacher, you'll have documentation to prove that you did everything you could to make this work.
It's kind of you to be considerate of this teacher, but I don't want you to take the fall for what she's doing. Not being able to do the observations is one thing, but if this is cutting into your study time, that is seriously wrong. I know it's hard, neither of us really likes to badmouth people, but there comes a point where you just need to do what's right for you. I just don't want your grades (or your health) to suffer over this.
