Reminds me of my roommate freshman year at college. One minute she would act like my best friend and the next would be at my throat. After a semester with her, I lived alone for the rest of college.
Find a new job. You will be happier for it. She sounds like she needs serious psychological help. That may sound harsh, but you are not in a position to give her the help she needs, and she needs to be the one to seek that help. Until she does, no one can help her. Neither you or Tommy deserve to be abused in that fashion. All you can do is remove yourselves from the situation.
It sounds to me like she has mental health issues, possibly due to the alcoholism you have mentioned before. Do you know if she has health coverage? I have no idea how to get help for someone who doesn't think they need it.
