The Nameless Dessert

I don't have a name for this dessert that I made for matt's farewell party. But I can tell you, this was REALLY sinful, which translates to REALLY good and also, it was really easy to make. Layers of puff pastry, with vanilla bean pastry cream mixed with the right amount of cream, drizzle some melted Valrhona chocolate on top.. I used my bourbon vanilla beans from Paris! It makes a pretty dessert.

Ingredients:

2 1/2 sheets of regular sized puff pastry. (About 12 x 12 inch per sheet)

Custard Cream
2 egg yolks
1/3 cup + 1/2 tbsp castor sugar
2 tbsp plain flour
1 cup milk
1 vanilla pod, split 
1 tbsp melted butter
1/2 cup whipping cream

100g Chocolate (melted)

Preheat oven to 200 degrees C. Cut puff pastry into half or squares or to whatever desired shape you want it to be. I cut 4 squares per sheet, so it's about (6x6 inches) per square. Bake in the oven for 15-20 minutes. Take it out, sprinkle some confectioner's sugar over, and bake for another 5 minutes. Make sure you bake it till it's golden brown

To make custard cream:

Mix the egg yolks and sugar in a pot till it becomes creamy. Sift in flour and mix well. Add warm milk into mixture slowly and mix well. Throw in the vanilla pod, make sure you get as much of the beans scraped out. Now place the pot on low heat and stir the mixture constantly until it thickens. Remove the pot from the heat and stir in melted butter. Cool the custard cream in the refrigerator to let it thicken further. When the custard has cooled, whip up the whipping cream and fold it into the custard cream.

To assemble:

You need 3 layers of puff pastry. Lay one square on your workplace. Spread custard cream on the first layer. Place the 2nd layer on top. Another layer of custard cream. Place the 3rd layer. Melt the chocolate in a double boiler or microwave. Drizzle chocolate all over (as much as you desire).

Serve it chilled and perhaps, to make it even better, serve it with ice cream!



Chun's Birthday



Chun came over last saturday and I cooked breakfast as part of her little birthday celebration! We had scrambled eggs, sausages and pancakes with tons of maple syrup!
