Dinner tonight - Shrimp Fajitas

These may not be as good as our favorite Mexican place makes, but they're still delicious.

The ingredients (note THE cookies in the background I made again today):






You'll need a pound of shrimp, fresh or frozen (thaw before using). I picked up a bag of frozen shrimp that was on sale the last time I went to the store. Unfortunately, I didn't realize until I started putting the meal together that they were cooked shrimp. It worked out fine, though.




Slice up a medium onion and a couple of green peppers. Sometimes I throw in a red pepper when I'm feeling wacky.




Heat up some oil in a pan. Saute onions and peppers and some garlic until crisp-tender. Then add the shrimp. If the shrimp were raw, I'd saute them first until pink, then add the veggies. But since they were already cooked, I just needed to get them heated up.




Next add a tablespoon of chili powder, 1/2 a teaspoon of cumin and a tablespoon of lime juice. Usually I use fresh lime, but I didn't have any on-hand. When I do, I also zest it and use some in the fajitas and refrigerate the rest for another recipe.

It's a little steamy at this point!




Mix well until everything is coated and hot.




Put mixture in a bowl and let everyone build their own fajitas. I put out lettuce, shredded cheese, salsa and hot sauce. Tonight I also made a topping of leftover corn, a can of black beans, some salsa and cumin. I used that to top my fajitas and it was YUMMY.

It was hard to get a great picture of the plate because we ate on the back porch and it was getting dark due to a storm coming in.







There was quite a bit of the salsa mixture left over, and that by itself would be good on a tortilla for lunch!
