At our annual Christmas party this year I was inspired by the Epcot Food and Wine Festival, and decided to do Christmas around the world. Man was it good! I unfortuantly didnt even think to take any pictures :( But I am going to try and post some of the things I made for you guys to try :)
First Up! Spicy Beef Empanadas from Argentina - These were a huge hit at the party, I made Approx. 50 of them there were none left, and people were begging for more.
For the Dough, I used Puff Pastery You could even use the shells with this it would be kinda cool, But I cut it into Squares and made little Empanadas with mine.
Filling:
- 1 cup lard (melted)
- 2 1/2 cups yellow onion (Or spanish onion)
- 1 1/2 pounds cooked roast beef cut into small cubes
- 2 1/2 tablespoons smoked paprika
- 2 tablespoons red chili flakes
- 2 cloves of garlic crushed
- Dash of Salt and pepper to taste
Directions:
- Heat the lard in a large saute pan until melted, stir in the onions and garlic and cook over low heat for approx. 5 min.
- Stir in the beef, and other ingredients
- Cook for approx. 5 min continuously stirring
Allow mixture to cool, Then fill each empanada folding over so they stick together.
Place the Pockets in on a cooking sheet and bake for approx. 10-15 min or until Brown at 350 degrees.
