Hawaiian Chicken Stir Fry

I'm usually not a huge fan of sweet/savory meals but this was really good, I got the idea from a recipe sight then changed it up to make it my own :)

What you need:

  • 1 bag of fresh cut broccoli heads

  • 2-3 boneless skinless chicken breasts cut into chunks

  • 2 tbsp rice wine vinegar (I actually used Mirin)

  • 2 tbsp soy sauce

  • 1 tbsp corn starch

  • 1/2 tsp garlic salt

  • 1/2 tsp crushed red pepper flakes

  • 1/4 tsp fresh ginger minced

  • 1/2 tsp garlic minced

  • 1 tsp cooking oil (I used olive oil)

  • 1 can pineapple chunks (with juice or syrup)

  • 1/4 cup chicken broth

What to do:

  1. Drain Pineapple and reserve juice. For Sauce stir together pineapple juice, vinegar, chicken broth, soy sauce, corn starch, garlic salt, red pepper, ginger, and garlic set aside. 

  2. Pre-heat wok or skillet over high heat Add oil, Stir fry the broccoli for 2-3 minutes until crisp/tender remove from the wok

  3. Season chicken with salt and pepper to taste and add to hot wok stir fry chicken 1-2 minutes

  4. Add broccoli and sauce to pan cook until bubbly, turn heat down and allow to simmer for 2-3 minutes until chicken is cooked through.

  5. Right before serving add pineapple and stir in to heat through.

    I served this over rice, but you could also serve it over noodles. Garnish with chow mein noodles. You could also add a bit of 5 spice powder to this dish if you wanted too, It would be yummy!!
