I'm usually not a huge fan of sweet/savory meals but this was really good, I got the idea from a recipe sight then changed it up to make it my own :)
What you need:
1 bag of fresh cut broccoli heads
2-3 boneless skinless chicken breasts cut into chunks
2 tbsp rice wine vinegar (I actually used Mirin)
2 tbsp soy sauce
1 tbsp corn starch
1/2 tsp garlic salt
1/2 tsp crushed red pepper flakes
1/4 tsp fresh ginger minced
1/2 tsp garlic minced
1 tsp cooking oil (I used olive oil)
1 can pineapple chunks (with juice or syrup)
1/4 cup chicken broth
What to do:
Drain Pineapple and reserve juice. For Sauce stir together pineapple juice, vinegar, chicken broth, soy sauce, corn starch, garlic salt, red pepper, ginger, and garlic set aside.
Pre-heat wok or skillet over high heat Add oil, Stir fry the broccoli for 2-3 minutes until crisp/tender remove from the wok
Season chicken with salt and pepper to taste and add to hot wok stir fry chicken 1-2 minutes
Add broccoli and sauce to pan cook until bubbly, turn heat down and allow to simmer for 2-3 minutes until chicken is cooked through.
Right before serving add pineapple and stir in to heat through.
I served this over rice, but you could also serve it over noodles. Garnish with chow mein noodles. You could also add a bit of 5 spice powder to this dish if you wanted too, It would be yummy!!
