Well everyone has leftover Turkey from Thanksgiving and I am not a sandwich kind of person, so a few years ago, I decided to perfect the Turkey noodle soup! This year I did it!
The Key? Pure Turkey broth!
First you need to create your turkey broth for your soup!
Take the carcass of the turkey and throw it in a large pot, cover with water and add celery (leaves too!) onion, garlic, a bay leaf or 2, whole peppercorns (or just pepper) and salt. Simmer for approx. 6 hours if you have the time, longer.
Wahla! Turkey broth, rich and yummy!
For your turkey noodle soup this is what I did!
Strain the broth
Add:
carrots
chopped celery
Chopped onion
leftover green beans from Thanksgiving dinner
leftover turkey broken up
(I also added a bit of diced up cabbage)
Cook for approx. 1 hour
add noodles
Once noodles are cooked, serve!
Because of the broth this soup was amazing!! make sure not to add water to your broth, the richness is what makes this soup awesome!
