My husband cuts it in half and removes the seeds and bakes it for about 45 minutes cut side down in some water, at about 350. Then he turns over the squash halves and puts some butter, brown sugar, and pepper in the halves and either bakes it again or broils it until the stuff is melted and the squash dries out some. It's good! Lots of seasonings would be good in it, too, and be fun to try- this is the basic version.
2 medium sized acorn squash 3 granny smith apples 1 can (fat free if you wish) chicken broth milk till creaminess you like (i use a little less than a cup) 1/2 cup(ish) brown sugar 1 tbsp(ish) cinnamon salt & pepper to taste
cut the squash in half length-wise and place face-down on 2 layers of paper towel--microwave for 10 minutes. let cool for a few minutes, then scoop out the meat into a large pot. add chicken broth, some milk, and the apples, chopped. simmer until squash is fully cooked and apples are soft. add cinnamon, brown sugar, s&p. stir. blend. (i use my blender and do it in small batches, using a large bowl for the blended batches. put a last few tablespoons of milk into the blender, blend to get the last remains of soup mixture out of the blender. stir up. enjoy with fresh bread. :)
