There are many varieties of this traditional Ukrainian dish - plain wheat flour galushki, galushki with mashed potatoes, galushki with semolina. Our favorite kind is galushki with cottage cheese. Takes me 30 minutes max to fix it up, but might take a little longer if cooking for the first time.
We will need:
Pressed cottage cheese (tvorog) - 500 gr
Sugar - 5 tbsp
2 eggs
pinch of salt
1 cup of flour
1. Break cottage cheese with a fork, add other ingredients and mix well
2. On a tabletop powdered with flour roll out into a sausage
3. Cup into pieces
4. Dip each piece in flour - both cut sides, and press slightly to form a circular shape
5. Cook in a boiling slightly salted water till galushki raise up to the surface
6. Pick out galushki with a slotted spoon and blace in a large bowl containing 1/4 cup of melted butter. Shake well
7. Serve with sour-cream, fresh berries or preserves
