Top Pork Loin Roast cooking time and side dishes questions!

Hello everyone! I got a Top Pork Loin for dirt cheap at my local grocery store and I was wondering if anyone had any ideas on what to do for sides with it. I'm thinking about doing this recipe for Roast Pork Loin with Apples (recipe also posted below) because it looks delicious and I love apples. My favorite pork loin recipe is to slather the loin in a mixture of apricot jam, with a splash or two of soy sauce, grated ginger and garlic powder. (Measurements depend on the size of the loin and your tastes) Coat the meat completely. If you have the type of loin that is 2 pieces, tied together, I make sure to spread the apricot mixture between the pieces, too.
I roast mine for roughly 20 min per pound, at 350. But I rely on a meat thermometer to be sure.
