I mixed some tandoori masala with 700ml yoghurt for the marinade. Rubbed some salt and black pepper and the marinade all over the turkey; roasted some fennel seeds, cumin, cinnamon and star anise, put the spices in the cavities and sprinkled more fennel on the skin. I stuffed some of the masala/yoghurt under the skin together with pats of butter, squeezed the juice of a lemon into the cavities, stuffed the turkey with the squeezed lemon, an onion and carrot and some garlic, then drizzled olive oil all over the bird before roasting. The result was a yummy, moist, tender turkey that everyone loved.
